Ingredients:

  • 2 slices of whole grain or sourdough bread (or your preferred bread)
  • 1 ripe avocado
  • 2-3 tbsp crumbled feta cheese
  • 1 tbsp olive oil (optional)
  • 1 tbsp lemon juice (optional)
  • 1-2 slices of tomato (optional)
  • Fresh spinach or arugula leaves (optional)
  • Salt and pepper to taste
  • Red onion slices (optional)
  • A sprinkle of chili flakes or herbs (optional)

Instructions:

  1. Toast the Bread: If you like your sandwich with crispy bread, toast the slices to your desired level of crispness.
  2. Prepare the Avocado:
    • Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
    • Mash it with a fork until it’s creamy but still a little chunky.
    • Add lemon juice, salt, and pepper to taste, and mix well.
  3. Assemble the Sandwich:
    • Spread the mashed avocado generously on one slice of the toasted bread.
    • Sprinkle the crumbled feta cheese on top of the avocado.
    • Add slices of tomato, spinach, and onion if desired.
