Ingredients:
- 2 slices of whole grain or sourdough bread (or your preferred bread)
- 1 ripe avocado
- 2-3 tbsp crumbled feta cheese
- 1 tbsp olive oil (optional)
- 1 tbsp lemon juice (optional)
- 1-2 slices of tomato (optional)
- Fresh spinach or arugula leaves (optional)
- Salt and pepper to taste
- Red onion slices (optional)
- A sprinkle of chili flakes or herbs (optional)
Instructions:
- Toast the Bread: If you like your sandwich with crispy bread, toast the slices to your desired level of crispness.
- Prepare the Avocado:
- Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
- Mash it with a fork until it’s creamy but still a little chunky.
- Add lemon juice, salt, and pepper to taste, and mix well.
- Assemble the Sandwich:
- Spread the mashed avocado generously on one slice of the toasted bread.
- Sprinkle the crumbled feta cheese on top of the avocado.
- Add slices of tomato, spinach, and onion if desired.
- Optional Touches:
- Drizzle olive oil over the sandwich for extra richness.
- Sprinkle chili flakes, fresh herbs, or a pinch of salt for added flavor.
- Finish the Sandwich: Top with the second slice of bread.
- Serve: Cut the sandwich in half, and enjoy your fresh, flavorful Avocado & Feta Sandwich!
